Best time to go to Disney in December?

We really liked Hotel New York when we were looking at all the hotels, and have decided we want to go back for a quick stay in winter. Can we really skate on the ice rink? We would be okay with possibly going in January as well. When do they take down the Christmas Decorations? Thanks.

Anytime mid-week before the schools break up is the best time. We went in early December last and the Sunday afternoon was manic but from Monday onwards it was lovely and quiet.

You can really use the ice rink - not sure how good the artificial ice is though. Christmas Dec are down around 6th January, 12th night
