Years ago, DH and I used to go mid-May and really liked it. It was warm-hot and US schools weren't out yet, so crowds weren't bad. (I'm not sure about more recent numbers, though.)
When DS was in school, we would add a couple of days to his existing breaks in Feb or April. Feb was hit or miss for weather, but personally, we've done well with "hits". April was almost always nice but didn't really give me the break from winter darkness that I craved, as spring was already coming here. It was definitely less crowded that President's week, though.
I couldn't find one big website listing the public elementary/high school breaks for all the states together, but you could search by individual states. (Some have a set week, some move with Easter.) This site: https://www.edarabia.com/school-holidays-united-states/ does list a few.
As for colleges, this site: https://www.springbreak.com/Spring_Break_Dates.html says:
For US colleges, Spring Break lasts one week and falls in March or April, with the peaking in the last two weeks of March. In 2023 the peak weeks will be Mar 4th and Mar 11th.

I would definitely check Disney's calendars for special events as well.
I totally agree! We were just at Universal (March 1-4) and the crowd difference on Saturday was huge. The week was really nice weather-wise as well. We're from New England, and very much enjoyed the blast of "summer".IMO, the biggest difference is going to be weekday vs weekend. The weekdays are much, much less crowded.
