Best places to get health food?

Anyone know if there are places to get certified organic foods in the park? If not, where would you eat for a whole week if you wanted to stay healthy? I know I can pick and choose off most of the menus to assemble a relatively healthy week, but I'm curious which of the restaurants come out on top for an overall healthy menu.
 
You're absolutely right about being able to eat somewhat healthy at WDW by picking and choosing carefully from every menu. There may very well be a scattering of organic items in the parks, but they don't exactly shout it from the rooftops. That being said, the one restaurant that has been spotlighting the health angle is The Wave at the Contemporary Resort. I know they have organic coffees, serve sustainable fish, and likely have other organic items, as well. They buy mostly local and regional ingredients. For a Disney restaurant, it's fairly health-forward, featuring such breakfast items as muesli and multigrain waffles.
 
For counter service, you might check out Sunshine Seasons at The Land pavilion at Epcot. While I do not think they are certified organic, they do grow their fruits, veggies, and some fish right on property (tuna & salmon I believe, as seen in the Livin' with the Land boat ride). They are a great choice for very healthy items.
