I vote for Soarin'. I love EE, but it's not really innovative. Yes, the Imagineers have taken the rollercoaster to a new and different level, but underneath it all, it's a rollercoaster.
Soarin' is a different animal. A totally new ride system had to be invented for it. In fact, Soarin' almost didn't happen. They had the concept, but had no idea how to load the people. Several ideas were discussed but none of them were practical. Then one Thanksgiving weekend, Imagineer Mark Sumner had an idea. He found his old Erector set in the attic, dusted it off, and several hours later had a prototype for the ride mechanism for Soarin'.
Soarin' is Imagineering at its finest.
BTW, did you know that Disney worked for over a year and half to get permission to film some of the sequences in Soarin'?
