Best CS for Vegetarians for Both Parks

My family is going to US/IOA for a couple of days and we are all vegetarians. I have a couple of restaurants in mind for sitdown but feel lost when I'm trying to pick a couple of CS ones. Can you recommend some for me?

Richter's has veggie burgers.

And lots of places have cheese pizza and pasta (Louie's, Monster Cafe, International F&F, Cafe 4, Circus McGurkus, Comic Strip).

Thundering Falls Terrace (IOA, near Jurassic Park) used to have a good selection for vegetarians. Black beans, rice, corn on the cob, salads, roasted potatoes,etc.
Hopefully someone can confirm these items are still on the menu.

Also, the bakeries in both parks (Croissant moon bakery in IOA and Beverly Hills Boulangerie in Universal Studios) had a veggie sandwich that came with fruit and potatoe salad. They had chocolate croissants too. Great for vacation breakfast, hehehe.

Do they have a platter of just veggie items with the black beans? Or do they charge you a fortune for each item as a side?

When I was there last, the items were a la carte but very reasonably priced.

Sorry I can't be more specific. But I've been veggie for years and have never had a problem finding (mostly) wonderful things to eat.
