Best breakfast for diabetics?

I'll be visiting with my mom for a day next Feb, and she's diabetic so sugary/carby waffles and tonga toast options are sadly out. She loves specialty omelets and poached egg/Benedict-type dishes. We'll be spending the day in Epcot and will not have hoppers, so our choice will have to be something that is not inside another park. Best restaurant options?? We're staying at Pop but looking for something just a little more special than the food court.

Buffets and character experiences aren't really a great match for us, just looking for something with awesome a la carte choices and a nice setting :)

Lobster Eggs Benedict at the Grand Floridian Cafe? Although, that's no where near Epcot or Pop.
 
Cape May at the Beach Club would be a good choice. Lots of non-carby options plus characters! best part is when you are done, head over to Epcot through the International Gateway, just a short stroll away!
 
Another vote for Cape May - great breakfast choices and short walk to Epcot!
 

Thanks for the input! The Lobster Benedict sounds amazing, but locationally I'm not sure - maybe if we felt like monorailing around though. Cape May looks fun but the character/buffet experience is not quite the best match for us :)

Still perusing menus... what do folks think of the Captain's Grille a la carte options?

Depends on if you have a car, the amount of time you want to spend, the amount of food you want to eat, and the amount of money you want to spend!!!

With a car - I'd second Grand Floridian for a nice breakfast with mom, but not a buffet. But - that takes ALOT of time using Disney transportation. Menu is online. Without a car - I think this takes too long unless I am headed to MK for the day.

For a lazy morning with Character buffet - Cape May. If using Disney transportation - you could take the bus to HS - then take the boat to Beach Club - just to "see the sites" - then walk from BC to EPCOT.

For BIG - eat too much breakfast - Boma at AK. For this one - while you can do buses all the way - I'd taxi to AKL, eat, then bus to AK to get a bus to EPCOT.

Being LAZY - There are breakfast choices in EPCOT. The French place does sell quiche, Starbucks sells their normal breakfast sandwiches, there's the food court. And Garden Grill - in EPCOT - does serve breakfast now. Character meal.

She can get breakfast choices pretty much anywhere at Disney that aren't based strictly on sweet carbs - it's just whether she likes the the choices at the place you pick. I think you ought to do some menu reading to decide.
 
I love Boma because it has a lot of protein options compared to other breakfast buffets. No characters either.

As a dietitian that talks to diabetics all day long I can give you some very valuable pointers.
A) its not so much what you eat but the amount. All buffets are horrible options because you will eat too much.
B) She needs to watch her carb servings and keep it under 45 grams per meal or 3 servings.
A serving is for the most part 1 slice or a 1/2 cup. So a slice of bread, English muffin, biscuit, etc. Or a 1/2 cup of cereal, pasta, grits, rice, oatmeal, fruit, etc. So if you have a sandwich and a piece of fruit theres your 45.
Meat, cheese and nuts dont have carbs so you wont need to count those BUT theyre not unlimited because they are high in calories and saturdated fat.

I find breakfast to be the hardest meal to eat out because so many options are bread or sweet based. I try to stick to meats and eggs. Unfortunately, I can't eat more than 15 carbs at breakfast and maintain good blood glucose levels - hopefully, your mom has enough experience to know how much she can eat.

We loved the breakfast at 1900 Park Fare. It is characters, but the buffet includes made-to-order omelets and plenty of protein choices.

Yeah, she has been dealing with this for years so definitely knows what she can and can't handle. I just want to find something with nice options that she will enjoy more than just an average meal. :)

Usually she is comfortable with meat+eggs and limited carbs like the english muffin in a benedict, small side of potatoes, or other starch. 1900 looks sweet but buffets in general are just too much food/wasted money on us, sadly.
 
What about Trattoria al Forno at Boardwalk? I only ever ate there when it was Kouzzina, but the breakfast menu does look similar. It had some different options, and was never crowded for breakfast. My father has a dairy allergy, and they were one of the most accomodating places we visited. I would think they could probably figure out some substitutions for your mom that would be low-carb (i.e., meat or veggies in place of potatoes or toast…).
 
I am a diabetic and I just loved AKershus breakfast at Norway..yes it is a buffet..but eggs, sausage, bacon, coffee, juice come to the table.FORGOT the potato casserole which I didnt do....and then they have fresh fruit (cut up fruit as well as whole fruit, and many options in the cold buffet area....I loved the options and I would do this one again..it was delicious ..
 
IF you aren't into the big BREAKFAST you can get a nice breakfast in the THE LAND. We almost always get breakfast there when we are waiting for our Soarin fast pass time to arrive. They have eggs, breakfast meats, certainly some low carb options for a great price.

I didn't realize they did breakfast! Will have to do some more review reading, thanks for the suggestion!
 
We enjoyed our breakfast at The Captain's Grille last October. It's also a very peaceful atmosphere.
