Well, you probably wouldn't like our favorite breakfast buffet which is Boma followed by Tusker House. Although they do have traditional breakfast foods, we prefer the variety and creativity that they offer.
It's not on the Dining Plan so it gets passed-by, but my family thinks the Fresh Mediterranean Market at the Dolphin has the best breakfast buffet, hands down. Made to order eggs, omelets, pancakes, french toast, fresh fruit, baked goods, specialty juices, and very good coffee. You can get a discount with the following: AP, AAA, DVC (at least the last time we were there) no TIW and no Dining Plan accepted. If you are paying OOP for breakfast it's definitely worth it - getting there is a bit of a challenge, but a taxi is quick, and it's an easy walk from BC, BW, EPCOT, and DHS.
Crystal Palace! My DH & DS are BIG traditional breakfast people and WE LOVE IT!!! I love the Mickey waffles! And they have some sort of b'fast pizza that my DH HAS TO HAVE! All the b'fast yummies you can think of. We have paid OOP before, THAT's how much of a fan we are! Happy eatin'!!!
P.S. When we go, we always have an early ADR and don't usually eat again until around 3 or 4.
We love the Crystal Palace. The made to order omelets are amazing. I miss the breakfast lasagna but I still think it is worth it. We always make the earliest reservation possible and get in the park about 15 minutes before that. You basically have the park to yourselves. They still do the omelets but sadly, Breakfast Lasagna is gone. We went in April and I almost cried when I asked the cast member about it and she told me they no longer served it. I'm thinking about starting a petition to bring it back. Man it was good!!!!
While it's not buffet, it is all you care to eat-Breakfast with Lilo and Stitch (and friends) at Poly. The food is very good and the character are as well. And it's a great view!
2 years ago we did Crystal Palace breakfast for the first time and thought the food was just okay. We've also done PF (though it's been a few years) and really enjoyed that one.
We will usually do a sit-down breakfast on our last day and since we don't go to a park, we will make a late ADR. So the places are pretty quiet when we are there. With the exception of CP which we did on DD's 10th birthday.

The fruit is very good.
No hashbrowns but plenty of waffles, eggs (very good), sausage (also very good), potatoes, bacon, and biscuits.
We really like the breakfast skillet at Whispering Canyon in the Wilderness Lodge. It's pretty much your traditional breakfast food and they will refill your skillet with whatever you request. And it's fun .
