The only bees I've ever seen have been in the Rose Gardens in Epcot and at the MK near the castle. They seen quite content to do their thing with the flowers and ignore the people.
Be careful if you will be visiting Animal Kingdom. We saw several bees and my son (age 2) was stung on his eyelid. Thankfully, he is not allergic to bee stings, but it was still quite scary.

Our mode of operation is for me to avoid TRASHCANS. DH is very diligent about keeping me away from trash cans -- all year long. We've been many times in February and haven't noticed enough "stingers" to cause concern. The things that sting are much worse late April through October. Usually, November through February, not so much of a problem. (We've never been in March -- but we're on our way March 15th).
