We are thinking about a trip December 28-January 5 ish. So much has changed and not sure where to start. Gonna start reading the boards again but any advice on what I need to do to fast track my learning curve?

As soon as you tap in on your first FP, start trying to modify your next and move one of them up.
I have been amazed at how many FPs you can get in a day.
Our last trip, we did 25 attractions and 22 FPs at MK and had to leave at 6 due to a party night.
Make all the ADRs where you know you really want to eat.
Expect it to be really busy. Anything less is a bonus.
 
Oh, don't look at crowd calendars.
Yes, WDW site is its own crowd calendar now with ticket prices per day.
Lowest crowd days cost $109 and go up with expected attendance from there to $117 & $125. Most Saturdays are $139 because that day is always crazy crowded. $159 tickets are reserved for insane crowds expected.
