Beans and Rice, Rice and Beans..........

No matter why you are cutting your budget (to pay debt, pay for gas etc....I thought we could all use some budget cutting recipies using beans and/or rice. There can be other ingredients but I would like the primary to be the above. Especially anything using dried beans and lentils. So please share your favorites. Thanks
 
I brown up some ground turkey, add a can of tomato sauce and a beans and whatever spices I have on hand. I serve it over rice. Once in a while I serve it over pasta too.
 
I make pinto beans from dried pintos and then make burritos, adding some salsa and cheese. You can also add some hamburger meat if you have some leftover.

Do you soak the beans the night before? And then how do you cook them?

Also anyone out there have a good one for red beans and rice?

One of my favorite quick and easy meals is red beans with sausage over rice.
I take a bag of dried beans red pinto or black) and soak overnight, drain and divide into 3 or 4 portions for use in recipes. For this recipe I take 1 portion of beans and add it into a skillet with a can of diced tomatoes with juice, and a package of smoked turkey sausage or kielbasa, sliced. Season with whatever you like...I prefer salt, pepper, some basil for an Italian feel or a package of Goya Sazon seasoning. Let that simmer until beans are tender and serve over rice. Makes a hearty and fast meal that is def. budget friendly.
 
Here is my favorite - it is SO easy!!!

1 pound dried black beans -- rinsed and sorted
1 large onion -- chopped
1 bell pepper -- chopped
6 cloves garlic -- crushed
1 (14 oz.) can diced tomatoes -- undrained
5 cups water
2 tablespoons olive oil
5 teaspoons cumin
2 teaspoons jalapeno chile pepper -- finely chopped (optional)

I do not soak the beans overnight. Just throw all these ingredients in the crock pot and cook all day then serve over rice!

Here are my typical modifications to this recipe: I do not use a bell pepper or jalapeno. Instead of using regular diced tomatoes, I use Rotel tomatoes - there are already chiles mixed in the can and I love the flavor! I also add 1 - 1 1/2 pounds of diced smoked sausage if I have it on hand. Great flavor and an extra bit of protein.

Great idea! I love beans and rice.

I make a lentil taco salad in the crockpot. Basically, I take a couple of green peppers (chopped up), about a cup of dried lentils, about a cup of brown rice, some onion and some spices (usually garlic, cumin and chili powder). I then add a couple of cans of vegetable broth (to make it even more budget friendly you could use water) and cook it in the crockpot on low all day. I then serve the bean and rice mixture over some tortilla chips, and add taco toppings to taste (we love lettuce, tomatoes, shredded cheese and salsa). Makes tons - easily enough for leftovers (we serve leftovers in wraps like burritos). Yummy, cheap, easy and nutritious. Lentils are my bean of choice because there is no need to presoak.

Here's my problem... I don't like beans. Never have. And neither does anyone else in my household. So then what do I do?
 
I posted this on another thread, but I'll put it here, too. I make a really easy version of vsimeone's dish. Brown one chopped onion, then add two or three cans (depnds on how spicy you want it) of drained black beans and a can of Rotel-type tomatoes. Heat at least 15 minutes, serve over rice with grated cheese on top. I usually buy storebrand tomatoes and green chilies and the cheapest black beans I can find. The dish tastes way more complicated than it is b/c of the all the ingredients in the tomatoes. It warms up great -- may even be better second time around.
 
when I make them with rice (spanish style) they will eat them:thumbsup2

every body have a different style of cooking this is how we make it
(you will need the SOFRITO as the seasoning base)

to make sofrito(simple)
2 big onions
2 green/red peppers
2 tomatoes
2-3 cloves of garlic
2 cilantro bunches
I dice all the ingredients and put it in a blender to puree...that's it sofrito.. I put some in a glass jar for cooking during the week the rest you can freeze to use as needed

rice with beans

2 cups of rice

1tbp of oil
salt ( 1 tsp) ( I always add the salt last as the chicken bouillion may add all the salt you need)
1can of tomato sauce (8onz)
2 tablespoon of sofrito
1 chicken bouillon
1 can beans (I always rinse them)
1 1/2 cups of water

put all the ingredients in a pot (minus the rice) and bring to boil
when is boiling I add the rice and stir to combine everything
cook uncovered until most of the water is absorb
after the water is absorbed cover rice and lower the heat

you could do rice with chicken the same way, just substitute chicken instead of beans ( put chicken in a pot first add the rest of the ingredients and cook for 15 mins then add rice, you could also make rice with can chicken sausages (a very budget friendly meal) by also adding the can sausages instead of beans

For red beans & rice, I chop one onion and put that in a crock pot with one bay leaf, salt & pepper, the beans, one pound of smoked sausage (sliced and quartered) and enough water to cover everything. Cook on high for 10 - 12 hours and serve over rice.

Here is an easy casserole that is mostly baked beans-- great for a Memorial Day cookout:

1 lb ground turkey or hamburg, browned
1 tsp salt
1/4 tsp black pepper
2 cans B and M baked beans (lg)
1 large onion, chopped
2/3 c ketchup
1/2 c brown sugar
5 slices bacon, cooked and crumbled


Fry onions and meat; season with salt and pepper. Add beans and transfer to casserole dish. Mix ketchup and brown sugar together, and add to meat mixture. Top with bacon. Bake at 350 fo 30-40 minutes. enjoy!

Dump the bag of beans into a bowl; then add water. Run your hands through them, or use a spoon, and "rinse" the beans. Sometimes there's little bits of leaves and stuff in with the beans.

I make a super easy version of pasta fagiole that my kids love. Just saute some chopped onion in a bit of olive oil. Then I add some celery leaves(:confused3 MIL told me to, I don't know why, lol) I add a bit of chopped celery. Then a can of cannellini beans w/ the liquid. Then a can of water and a can of chicken broth. Bring to a boil and add a bout 3/4 of a lb of little pasta-I use dittalini or elbows. Throw in a small can of tomatoe sauce and cook until pasta is soft. Serve with a lot of parmesn cheese and voila-cheap and easy and filling!
