For Grand Cayman, go to google.com and use the search terms "beach grand cayman" (no quotes), you'll get a bunch of hits. You could do the same for each location.
In Cozumel, IMHO, the BEST place to go hang out and snorkel is Chankanaab St. Park. Cheap, clean, fabulous! We were there from the time they let us off the ship until sundown. You take a cab there for approx. $10 (they are right outisde the cruise terminal, can't miss them) and then the admission is $10 per adult, can't remember for kids, maybe $5? Do not do the DCL excursion there, it's a ripoff. For the three of us, we paid less than what they wanted for 1 person.
Also, check out DisneyDarwin's trip report from the 11/23 Western - we were on that one with him. You'll have to dig for it, but it's worth it. He details everything about how to do the days on your own.

I have been collecting (Cut and Paste) many posts from this forum about the ports of call. Here is my "Reader's Digest" version of what I have for Cozumel (credit due to the many original authors):

The Magic typically docks at the Punta Langosta pier in Cozumel. That's right downtown.
Most prefer Mr. Sancho's over Playa del Sol as there is no entrance fee. The food is better at Mr. Sancho's over Playa del Sol. Neither beach will have much in the way of snorkeling. A white, sandy beach (as both of these are) pretty much guarantees a dull undersea life. TAKE NOTE that Mr. Sanchos' accepts CASH ONLY NO CREDIT CARDS
To see the island for less money (cabs can be expensive) is to rent a car, you can drive and explore all you want.
As for beaches, Mr. Sancho's, San Francisco and Nachi Cocom are preferred, simply because of the entry fee Playa Sol charges. Rent a car, and definitely head to the other side of the island and plunk down at either Chen Rio or Playa Bonita. Also plan on stopping at Coconuts for a drink, possibly an order of shrimp fajitas, and the spectacular view! Make sure you swim ONLY at the established beach clubs, as the currents can be quite strong and you may find yourself on an unscheduled tour of Cuba...also stop at Mirador (natural bridge) for a photo op.
Also try Nachi-Cocum beach. Lovely beach area, as well as changing rooms, showers, great pool and Jacuzzi, restaurant and bar. No charge for the use of all facilities. Nachi Cocom is much quieter than the other beach clubs. They have full facilities (restrooms, restaurant, and palapas). It's about a half hour ride from the ship to Nachi Cocom.
The best bets for good snorkeling are Playa San Francisco and Chankanaab Bay.
Chankanaab is not the best for playing in the sand, as far as beaches go. The snorkeling is great though! There is a little sandy beach area, not really a true beach, but you can lounge and look out over the reef. There are free loungers and little Tiki type huts, and a lot of area to walk around with trails through a tropical garden and of course the beautiful lagoon. The park has some ruins, but not much in that area. This is very easy to do on your own. Entrance to Chankanaab is $10 per person for 8 year olds and older, free for 7 year olds and younger.
Chankanaab has a Sea Lion show. Cost is $10 adult (kids are free). It's a very cute and fun show. Afterwards you can have your picture taken with a sea lion where you get kissed by the sea lion. There is also swimming with the dolphins, but it is expensive if you are on a budget.
Dzul Ha is smaller, less crowded, has better snorkeling, chairs, shade and a restaurant. This is where Sally takes her friends who come to visit her in Cozumel. Dzul Ha is approximately 4 miles south of the pier where the Magic docks
Playa del Sol is great for little kids. Lots of fun activities on the beach and in the water! Beach is nice (touristy) and there were other things to do there, like water trampolines (there is no additional charge to use them), a petting zoo, and open-air shops. From Mr. Sancho's, you can walk down the beach to Play del Sol Entrance is $8 bucks each (for 6 years old and up). The have paddle boats (free) out to the inflatable "iceberg." You can climb and slide into the ocean. Food is quite tasty. BUT, if you try Mr. Sancho's first (free), and don't care for it, Playa del Sol is really just a short walk down the beach (about 1/2 mile). Just walk to the right and you will find your way there.

Vans will always cost you the price of two taxis plus $2, so it will always be less expensive to take 2 taxis. The reason for this is that when you request a van, the van jumps to the front of the line, bypassing all the taxis that have been waiting for passengers. To encourage passengers to take the next taxi in line, or the next two taxis in this case, they charge you more for a van. The only advantage to the van is that a group of eight can travel together, instead of waving back and forth from one cab to the other.

What to do at Grand Cayman:
Arrival Time: 7am - Depart. Time: 5pm
Tenders for Grand Cayman - DCL gives preference for the tenders to shore for those on their DCL excursions. However you certainly CAN get a tender ticket early if you want; you just have to be in the designated spot (with ALL of your party) to get tender tickets and wait until your number is called. They switch to "open tenders" around 10:00 or 10:30 and don't require tickets after that point. The last tender is at 4:30 back to the ship, so get your activities in early.
If you don't mind going down EARLY and being sure you get an early tender ticket then you can make your own early excursion, even if it's not booked through DCL. They started giving tender tickets at 7:30 A.M. and asked that everyone had eaten breakfast and all party members were ready to go when you pick up the tender ticket. So as long as you are in the place (all together) by a little before 7:30 you'll be fine
Good snorkeling sites - Stingray City and the nearby Sand Bar in North Sound are Grand Cayman's most popular Snorkeling sites. Popular west coast sites, which are easy to reach from shore on Grand Cayman, include these locations just south of George Town:
o Coconut Harbor
o Sunset House
o Sea view Hotel
o Parrot's Landing Waterspouts Park
o Eden Rock Dive Center and the shallows reefs directly off Paradise Reef bar - Walking distance from pier. Very-nice.
On Grand Cayman's west coast just north of George Town: Don Foster's dive shop on North Church St. and Calico Jack's - both are the best entry points to see the wreck of the Cali. Other good locations include just off Bob Soto's Scuba Center at the Lobster Pot restaurant. Treasure Island Resort has good Snorkeling off its beach. Other popular locations further north include Cemetery Reef in West Bay and Turtle Reef, just north of the Turtle Farm at Northwest Point.
The shallows off Morritt's Tortuga Club and Resort's lovely beach offer a surprising variety of fish and other marine life
If snorkeling isn't what you are looking for, you can take a cab ($4 pp 10 to 15 minute drive) to 7-mile beach and spend the day at the beach. Ask the driver to let you off at the Holiday Inn. All the beaches in Grand Cayman are public, so you can walk on for free, there are bathroom facilities, showers to rinse off before heading back, and there are waiters taking drink orders on the beach. We had room service deliver PB&J sandwiches that morning, along with some fruit and Chocolate Chip Cookies. They also threw in potato chips with the sandwiches. I packed this all up in my Ziploc bags, and we had a free picnic lunch on the beach. We did buy a couple bottles of water and diet coke from the roaming waiters. The beach is beautiful and not too crowded.
Busses in Grand Cayman: Save your money & time. The new bus terminal is located adjacent the Public Library on Edward St. in downtown George Town and serves as the dispatch point for buses to all districts. There are 38 mini-buses operated by 24 licensed operators, serving eight routes. Eight routes serve the island and include service to West Bay (the most frequent service, running every 15 minutes), Bodden Town, East End and North Side (once an hour). A bus also serves stops within George Town. Daily service starts at 6:00am from the depot. The schedule is as follows:
From George Town to:
West Bay - every 15 minutes. Fare is CI$1.50 each way.
6:00am - 11:00pm, Sunday - Thursday.
6:00am - midnight, Friday and Saturday.
Bodden Town - Every 30 minutes. Fare is CI$1.50 each way.
6:00am - 11:00pm, Sunday - Thursday.
6:00am - midnight, Friday and Saturday.
East End and North Side - Every hour. Fare is CI$2 each way.

Route 4 - (purple) operates between the depot and East End.
Route 5 - (red) goes from the depot to East End and North Side.

Route 7 - (dark green with white numbers) is an inter-district service for George Town.
Route 8 - (orange) runs from the depot to Hutland in North Side.
Public buses are identified by blue license plates. To maintain consistency in fares, each bus must display a fare table outlining standard government-authorized fares. It's a beautiful island; Take the drive up to Rum Point, what a picture postcard spot that is! Found the "blow holes" along the coastline, that was completely mesmerizing.
Made the trip to Hell, kind of a tourist trap but send postcards form there to friends.

Tour Pedro's Castle, Historic Bodden Town beautiful East End and magical Rum point. Tour the world famous Seven Mile Beach is on the West End of the Island, approximately 10 minutes away from the Cruise Ship Terminal.
Visit the Turtle Farm, Hell, and the secluded beaches of Barkers. A snorkeling stop at the beautiful Cemetery Reef is a must. Extremely informative Grand Cayman driving maps are provided by Avis.
The Turtle Farm is open seven days a week, from 9 a.m. to 5 p.m. Price: US$6 for adults, US$3 for children (ages 6-12). Free for children under six.

Our price is $25 US per person. Everyone pays the same price except for children under 6. There is no charge for children under 6. In addition, if someone who comes along and does not go in the water, they can pay $10 each.
Our AM tour departs from the pier at 9 AM local time and completes at 11:45 AM. After the tour, you can be dropped off back at the pier, or at 7-mile beach.

Tour Pedro's Castle, Historic Bodden Town beautiful East End and magical Rum point. Tour the world famous Seven Mile Beach is on the West End of the Island, approximately 10 minutes away from the Cruise Ship Terminal.
Visit the Turtle Farm, Hell, and the secluded beaches of Barkers. A snorkeling stop at the beautiful Cemetery Reef is a must. Extremely informative Grand Cayman driving maps are provided by Avis.
The Turtle Farm is open seven days a week, from 9 a.m. to 5 p.m. Price: US$6 for adults, US$3 for children (ages 6-12). Free for children under six.

I have to look into renting a car in Cozumel. I'm sure I will NEVER put my 4 year old in a taxi and the beaches on the other side sound great.

Just back yesterday from Western, this is what we found on our Grand Cayman day. If you book an excursion privately, get to the tender ticket place (think it was WD Theatre) early once they announce tender tickets are available. All the DCL excursions are getting off the ship also, and they get "first dibs" so each group of 20 or so are released with their ticket when availability of tenders is open. But the tender ride is quick, you get off at the pier and directions to where your going are quite easy. We did Captain Bryan's Stingray City and Snorkel, and it is amazing. Slow on the registration and deposit info activity, but then your all set with van ride to the boat. Hang with the boat captain, and you'll get to see the best snorkeling, because he has the fish food when he snorkels! And bring your water camera's for the stingrays, because it is awesome. You get to hold them, pet them, etc. And, snorkels are really not needed for this, just goggles. Makes it easier on the kids, because you are only in four or five feet of water. So if they can swim, just put your head in the water and look!
