i wish he could help me now..
not sure if renting a car or not.

I can't answer number 2, but I will try to help with number 1.
First, I always suggest to anyone who wants to eat at a Disney resort to plan on the closest theme park for that day, or part of that day. So if you want to eat at the Poly, Contemporary, Grand Floridan, Wilderness Lodge, or Fort Wilderness, plan on the Magic Kingdom. You can walk to the Contemporary or monorail. The Poly and GF are on the monorail. FW and the WL are a boat ride away and the dock is right outside the MK entrance.
Since you are staying in the Epcot area all the restaurants/resorts in that area are a short walk for you. If you want to go to any other resort your best way is via the Disney Studios, as long as the park is open. You can take a 20 minute walk or take the Friendship boat over. You don't have to enter the Studios for the buses. If you were to go via the Epcot International Gateway you would need admission. Then you would have to walk through part of World Showcase and then through Future World to exit at the main entrance where the buses and monorail are located. This is a very long walk.
You can also easily take a taxi from any Disney resort. Very fast and reasonable way to get around WDW. From the Beach Club exit out the main entrance, not the boardwalk side. Normally taxis are waiting outside all WDW resorts. If one is not there a Cast Member will get one for you right away.
