I am looking for ideas for a Girl Baptism gift for a seven year old.

what about a nice picture frame for a picture of her that day, a nice small pewter cross or perhaps an album. I think it would be nice if it were something she should keep forever

The book The Twelve Gifts of Birth by Charlene Costanzo. You can get it in most book stores, or online at http://www.twelvegifts.com. It's a beautiful story about the gifts a princess is given at birth, and I believe the last one is either "Faith" or "Belief". Great artwork as well.
