Anyone have a good recipe for banana bread that they'd like to share? I've got some nanas and haven't made any bread in a lonnnnggggg time. Found some recipes online, but thought I'd seek some with recommendations. :)

Thanks!

My recipe is from the Mickey's Gourmet Cookbook. It is from the Monorail Cafe at the DL Hotel.

2 sticks butter
2 cups sugar
2 eggs
2 cups of bananas
1/4 teasp. vanilla
3 cups of flour
1/2 teas. salt
2 teas. baking soda
1 cup of walnuts (which I don't use)

Preheat oven to 350. Melt butter and then mix butter with sugar until well blended. Add eggs one at a time, mixing well. Add bananas and vanilla.

Mix together flour, salt and soda, and then add to other mixture until four mixture is moist. Grease 2 loaf pans and divide batter equally between them. bake one hour or until center of loaf is firm and toothpick comes out clean.

I prefer to use aluminum (disposable kind) pans. bread cooks through better and is moist. I make this bread all the time. My family just loves it.

Our favorite is from Wilderness Lodge. :)

Strawberry Banana Bread
from the Whispering Canyon Cafe, Wilderness Lodge

2 tsp baking soda
1 c butter
2 c sugar
1½ lb strawberries
2 c bananas (~6 medium)
4 eggs
1 tsp salt
3 c flour

Grease two loaf pans & preheat oven to 325. In a large mixing bowl, cream the butter & sugar. Incorporate bananas scraping sides of bowl. Add the eggs one at a time, mixing thoroughly after each. Set aside. In another bowl, mix together salt, baking soda & flour. Add flour mixture to butter mixture & stir until blended. Add strawberries (thawed). Bake 60 to 75 minutes or until a toothpick comes out clean. Cool completely on a rack before inverting onto a plate.

Thanks! I have everything for the first one posted, so I'll give it a try. I'll save the other one for next time! Thanks!
