Baked Mac N Cheese, with what?

I was going to try making Emerils baked mac n cheese for dinner, but I'm not sure what else to serve with it for those (like my DH) who don't think that it is a complete meal. Any suggestions? Also, do you think this is something that can be made ahead of time and either put in the fridge or freezer? Would you just add extra time for baking then? Thanks.
 
I think I'd serve it with a nice salad. Definitely could be made ahead and refrigerated as long as you wrapped it well.
 
Pork Chops (grilled) if you don't do hot dogs and mac. We do cut up hot dogs in mac and cheese all the time!!!! Had it last night in fact.
 

My mom always fixed pork chops with her homemade mac and cheese.
 
and a bright colorful veggy........cause the mac and cheese is not really colorful....I did this a few weeks ago and we had tossed salad and bright green brocolli.......made it nice
 
My dear father used to make quatro formage (4 cheeses macaroni). We would have either broccoli or curried carrots with it. Perfect matches!!! Meat was always too much to have along with it.
Can we have your recipe for mac n cheese?
 
Well thanks for all the suggestions. We actually ended up having smoked sausage with it(basically hot dogs). Here is the recipe from Emeril:

2 t salt
1 t olive oil
1/2 pound elbow macaroni
9 T butter
1/2 c flour
3 c milk
1/4 t pepper
3 c grated cheddar cheese(about 8 oz)
1/2 c fine bread crumbs

1. Preheat oven to 350 degrees
2. Bring large pot of water to rolling boil over high heat. Add 1 t of salt, the oil, and macaroni and stir.
3. Reduce head to medium and cook 10 min stirring occasionally.
4. Drain pasta and rise under cold water. Set aside
5. Grease 2 quart casserole dish w/1 T of the butter and set aside.
6. Melt remaining stick of butter over medium heat. Add flour and cook over medium stirring constantly for 3 or 4 min. Do not allow the flour to brown. Using a whisk, add the milk and cook, whisking constantly until think and smooth, about 4 min. Remove from heat and add the remaining 1 t of salt, the pepper, and 2 cups of cheese. Stir well.
7. In mixing bowl, combine remaining 1 c of cheese with the bread crumbs.
8. Add macaroni to the pot with the milk and cheese and stir. Pour into buttered casserole dish. Top with the seasoned cheese mixture.
9. Bake until brown and bubbly, about 25 min.
10. Remove and let sit 5 min before serving.


This turned out really well. A couple things....make sure you let it sit after its out of the oven or it will be a little loose. Also, I bought 3 cheese flavored bread crumbs which made it even cheesier. Enjoy!
 
My mom made mac and cheese and it was the best!! She'd always take it to picnics and everyone always loved it. Her recipe was very simple with about 1 cup of cooked elbow macaroni, extra sharp grated cheese, salt and pepper to taste, and dry mustard sprinkled on top. In a 13 x 9 inch glass dish, she'd pour milk about 1/2 way up the side.

Her favorite (or mine!!) meat to serve with it was sausage from the local butcher. Not exactly a cholesteral free meal ;) but so good!
 
I'm getting to this thread rather late, but my very favorite thing in the whole world to serve with macaroni and cheese is stewed tomatoes. There's just something about the combination that can't be beat. Sorta like comfort food to me.

To make stewed tomatoes . . . I buy a can or two of stewed tomatoes at the store. Add in a spoonful or so of sugar, a tablespoon or so of butter, and about four to six slices of bread (torn in bite size pieces, the drier the bread the better). Then, either cook the mixture on top of the stove till heated or pop it in the oven for about 20 minutes or so. Yum! Yum! Wish I had some right now.
