Avoiding rush hour traffic

We are driving to Fort de Soto Beach on a Saturday and to Daytona on a Tuesday (both day trips from WDW).

What time would you recommend leaving our hotel to avoid rush hour traffic? I imagine that the Saturday drive shouldnt be a problem - so it's probably the Tuesday drive that I need help with!
