I am looking for an authentic recipe from Iraq for Baba Ghanoush. We are having a guest for Easter that is home sick and is hungry for home cooking. Any authentic recipes would be great. He is from Baghdad. I know that flavors are different depending on where you are from.

Before I go out and buy all the ingredients for some random online recipe I thought I would ask here for a tried and true. I hate throwing out food.

Thanks.

I did post on the food board also.

From Foods From Biblical Lands cookbook, probably more Lebanese

Tahini Baba Ghanouj

1 medium eggplant, dark skinned
2 cloves garlic
1 tsp salt
2 tablespoons each of pine nuts, pomegranate seeds and chopped parsley
3 tablespoons tahini
juice of 2 lemons
2 tablespoons water

Pierce eggplant with fork to let steam escape. Broil with skin on, turning it frequently. remove skin under cold water and mash the pulp. Pound garlic with salt, add tahini, lemon juice and water. Then mix with eggplant and salt. Spread on a platter and garnish with pine nuts, pomegranate seeds and parlsey. Serves 4 Line platter with zatar chips.

This is my go to book for cooking middle easten food and was given to me by a Lebanese friend. HTH:)
