i seem to recall Irma hitting around these dates.

Did FLA get hit at this time also in previous years? I havent been this time since 1993. It was rainy in patches and hot but good. Soooo long ago not sure what to expect :)
 
You can look up weather history and I'm sure you can find that. But the fact that a hurricane hit those dates in years past has absolutely nothing to do with the future. Hurricane season is June through October, they can happen anytime. Peak season is August/September, but they can be anytime...Sandy (which I know was in the northeast) was right before Halloween. WDW is pretty well protected anyway.
 
Anything can happen. It's hurricane season. We've been the last week of August every year for the past 7 years and the only time we were personally affected during that week was when Isaac hit up north and it affected our flights. We still got to WDW (was able to leave a day early to bypass the storm), but if a hurricane hits anywhere in the US during that time, it affects flights and hotel and park capacity. There is no way to game this other than not going at all during the entire hurricane season, but chances are you will be fine. Consider purchasing travel insurance.
 
We have gone to WDW the week leading up to and through Labour Day since 2012 (your dates fall within that range). We fly down the Saturday before the labour day weekend and fly back on labour day Monday. Last year Irma hit after those dates. We flew home on the Labour Day monday and I believe Irma started to be an issue at the end of that week Thursday/Friday.

I recall one year a hurricane was hitting the keys exactly the time of our flight. All southern Florida airports were shut down, but Orlando was still open. That was the closest call we've come in our 6 trips. Every year I watch the national hurricane centre starting about 2 weeks before departure up until we are leaving just to see if I need to make a last minute change, so far so good (knock on wood).

It is right in the middle of hurricane season though, so the risk is there. Weather in general is typical Florida summer, super hot, super humid and you can almost set your watch by the mid afternoon downpours/thunderstorms.
 

Last year, Irma affected the parks at the end of the week of Labor Day. The parks closed early that Saturday and were closed Sunday and Monday. We had been down there since the Friday before Labor Day and had planned to stay until Sunday, but decided to leave early Saturday morning, since we had driven and needed to be back in Atlanta for work Monday. Sunday driving conditions would have been terrible. The year before, the hurricane that closed the parks was, later, near the end of the first week of October. From my research, in it's 46+ year history, they have closed parks due to storms 5 times. It is not something I would be concerned about. Orlando is inland (well, as inland as you get in Florida) and rarely has significant impact from hurricanes. If those dates work well for you, I would go then without hesitation. As a matter of fact, I just booked a room for us for the exact same week this year as we went last year.
 
We go annually last 1 or 2 weeks of August and first few days Sep. Confirm via google but IIRC last year it was approx. 105 'real feel' temperature almost daily the first portion of our trip - I know, its August in Orlando, but it was crazy hot for so many days. (And it was the largest crowds we'd seen at that time: they started F&W early, and lifted the black out on certain FL annual passes. This is the last year we're going at that time - we only put up with the heat/humidity/storm risk for the lower crowds. Kinda freeing, really - we can just go when convenient now, not when crowds might be lowest.)
 
We go every year last week of August. It's hot and it rains. It's good Waterpark weather.
 
We live about an hour and half away and go to Disney all the time Labor Day weekend. We were there for 3 days in 2017 and Irma hit the weekend of the 10th. My daughters birthday is September 14th and since schools were cancelled and we had no power at home we made a trip back. The resorts were empty as well as the parks and we had a/c!!!
