Is it easier to have everyone in your family all entered in to the Arrive Can app or should my husband and myself each have them on our phones?

Everyone in one shot. It'll give you one "receipt" that covers everyone. It's kinda like would you enter all of your family under one customs declaration card or do separate ones?
