Are we going to be out of luck?

My DH and I will be going to WDW this Wednesday for a last minute "bonus" trip. I call it a bonus trip because we're only going because DH's company is sending him to a conference at the Swan that's happening Thurs thru Saturday and his flight and our hotel is paid for so pretty much half of the trip is paid for by his company. BONUS!

We got engaged on the beach at the Poly last year and we're looking forward to going back and visiting "our hammock" and hopefully enjoying some signature dining. Unfortunately, the trip came together last minute and I've made NO reservations to any restaurants. We've gone to CG for fireworks our past two trips (and, in fact, dined there the night that he popped the question) and would like to get back there for this trip. Are we going to be out of luck because I haven't been able to obsessively plan like I usually do? How about getting in at other signature restaurants like Jiko or Flying Fish? We don't mind eating late at night.

I'm not too sure what DH's schedule will be like with his conference so I'm not sure if I want to make ressies for every night... Are we going to have a hard time getting into nicer restaurants for dinner?

I don't think you are necessarily "out of luck." I would suggest calling Disney Dining and checking to see what's available. People cancel and change their reservations all the time and you never know what will pop up. Plus I have found that it is usually much easier to find availability for a party of 2, regardless of how close you are to your trip. Good luck!
 
I would go to the phone right now and see what you can get. Give them the dates and the type of places you like. They will probably find you a few things, especially since you don't mind eating late. Plus you can check when you get there and try a walk up. I'm sure you will get something.
 
On our last trip in May I made our dinner ADR every morning at the front desk. By then everyone had canceled and moved around their ADR's for dinner. I am sure you will find something. Just make it your job to call every day a few times a day until you get what you want.
