Getting close to that time that I'll be stocking up on apples and doing some baking - muffins; coffecakes; pies; turnovers; bundt cakes; etc..

I was thinking about trying to freeze some peeled apples this year for use during the winter.. Would that work? Is there something special I would have to do to them before I put the peeled slices (or chunks) in containers?

I don't have the necessary supplies for canning, so that's out..

Anyone here freeze apples?

I read in the Food network magazine last night to cut apples really thin put on parchment paper cook for 1 hour at 200 degrees for crispy apples....didn't work they weren't crispy at all!!! Any ideas?
 

Yum. What kind of bundt cake do you make with apples? Is it a breakfast type thing?
 
Hi CAnn! My Mom and Aunt's have always frozen apples. As you slice them keep them in a bowl of cold water with a little salt or lemon juice.
Drain them well when ready to put in freezer bags. They will get a brown tinge, and maybe even some ice crystals, but great for fried apples or pie. Try a sample batch and keep in your freezer for a few days to see if you think this will work for you.:)
 
Do you have Honeycrisp apples near you? They keep in the refrigerator for a LONG time.

My MIL will slice apples put in sugar and cinnamon and freeze for baking pies, etc.

I suppose it could be served for breakfast, but I think it's meant to be more of a "dessert" type cake..

Here is the recipe - with some of my personal thoughts along the way..:goodvibes


Glazed German Apple Cake

5 apples - peeled and thinly sliced (I use twice as much - we like apples!)
5 Tablespoons sugar
2 teaspoons ground cinnamon (I use more - we love cinnamon too!)
3 cups of flour
2 and 1/2 cups of sugar
1/2 teaspoon salt
4 eggs
1 cup vegetable oil
2 teaspoons vanilla extract (I use a bit more of that too..)
1/3 cup of orange juice
1 and 1/2 teaspoon baking soda
1 and 1/2 teaspoon baking powder

Preheat oven to 350 degrees. Grease and flour large fluted (or not) bundt pan.

In a medium bowl, toss the apple slices, 5 Tablespoons of sugar, and the 2 teaspoons of cinnamon. Set aside.

In a large bowl, mix flour, sugar, salt, eggs, oil, vanilla, orange juice, baking soda, and baking powder. With an electric mixer on low, blend for 1 minute. Then set mixer to medium, and blend for 3 minutes. The batter will be very thick.

Fill the bundt pan in layers - beginning and ending with the batter. Batter, apples, batter, apples, batter, apples, batter - until you run out of ingredients.

Bake for 1 and 1/2 hours to 1 and 3/4 hours - or a toothpick inserted in cake comes out clean.

Cool in pan - on a wire rack - for 10 minutes. Then invert onto a serving dish/platter.

When completely cool, drizzle with Glaze..

Glaze

1 and 1/2 cups of Confectioners (powdered) sugar
2 Tablespoons butter or margarine - softened
1 and 1/2 teaspoons vanilla extract (I use a bit more.)
1 to 2 Tablespoons of water (whichever is required to acheive the correct "drizzling" consistency)

Combine all in a medium bowl and mix until smooth and of the correct consistency.

If I don't feel like fussing with the Glaze, I serve it with a bit of Confectioners sugar sifted over the top. My family actually prefers it this way..

***Because this cake is so dense, moist, and there are so many apples in it, I find it best to cover and refrigerate leftovers to prevent mold from the apples (especially in the warmer weather)..

Thanks for posting the recipe for the bundt cake! I'm supposed to bring a brunch dessert dish to an event coming up soon and this sounds perfect.
 
We went to Apple Hill Thursday. Bought 2 pies, and apple dumplings, but the apples look small this year. No reason you can't freeze apples.

A friend of ours mixes up apples for pie filling and cans it. Works well and makes it easy to make a pie at any time.
 
I just talked to my daughter up in Connecticut and she's baking apple pies with the apples she got from the orchard today. I'm sure it's just my imagination, but I can smell them baking alll the way down here in Florida. :thumbsup2

Awww.. I would love to do that for you, but I just couldn't.. I have never sent that sort of food through the mail before and I'm afraid it would arrive stale; in crumbs; moldy (especially with apples); or any other number of things..

I wish you lived close by, because I would be more than happy to do some baking for you..
