Anyone got a good recipe for apple cake?

We have a bumper crop of apples this year. We've made apple crisp, apple pie, apple butter.
We've dehydrated a bunch into apple chips.

We've given a bunch to food banks and to friends.

But we still have apples!

I remember a great apple cake that I had in the past, and was wondering if anyone has a good recipe for this?
 
Never tried this but someone I know posted this:

this is a really heavy , dense cake and it freezes well.


Apple Walnut Cake

4 cups peeled, cored and sliced apples
3 cups flour
2 eggs -slightly beaten
1 teaspoon salt
1 cup oil
2 cups sugar
1 cup chopped walnuts
2 teaspoons cinnamon
2 teaspoons vanilla
1 teaspoon baking soda

Preheat oven to 350°

In large mixing bowl, combine dry ingredients. Add vanilla, oil, and eggs. Mix well (I use my hands as the mixture is very stiff)

Add apples and nuts. (Mixture will become gooey as apples are mixed in)

Press into 9x13 pan and bake for 1 hour or until knife inserted in center comes out clean. If apples are juicy you may need to bake longer
 
I've made the angel food cake where you just mix a can a apple pie filling with a one step box of angel food. I would imagine you could make homemade pie filling and do the same.
 

This is a fabulous Apple Cake recipe. It won "best dessert" at a work potluck.

Cinnamon Apple Cake

1 3/4 cup sugar -- divided
1 stick butter (softened)
1 tsp vanilla extract
6 oz block cream cheese (softened) -- regular or fat free can be used
2 large eggs
1 1/2 cups flour
1 1/2 tsp baking powder
1/4 tsp salt
2 tsp cinnamon
3 cups chopped, peeled apples (Rome, Gala, Red Delicious work best)


1. Preheat oven to 350 degrees. Grease, or spray, 8 inch spring form pan.
2. Beat 1 1/2 cups sugar, butter, vanilla and cream cheese at medium speed, until well blended. Batter will be thick.
3. Add eggs, one at a time, beating well after each addition
4. Combine flour, baking powder and salt -- in separate bowl.
5. Add dry ingredients to wet ingredients, beating low speed until well blended.
6. Combine remaining sugar (1/4 cup) with cinnamon -- in separate bowl
7. Combine 2 tablespoons of cinnamon sugar mixture with the apples, in a bowl.
8. Stir apples in to batter.
9. Pour batter in to spring form pan.
10. Sprinkle remaining cinnamon sugar mixture over top.
11. Bake @ 350 for 1hr, 5min. When done, cake will pull away from sides, and center will spring back. Cool completely before removing spring form ring.
