We need two rooms, one for my parents, and one for my DH and myself. My parents don't have AP's anymore, so, can I make a reservation for 2 rooms and if I can, do I need to list my husband or myself (The AP holders, as staying in the second room , or is that necessary?

Yes-- you can reserve up to three rooms on the same AP, for the same time period-- they must be on the same reservation, and in the same resort. You do not have to be listed in all of the rooms.
