anyone with a vegetarian for thanksgiving

I always try to make something special for my son in law......

veggie broth in a can...
simmer in a small pan on top of stove
add a little flour and water to it so you
can thicken it.....I add a little gravy master
for coloring and flavor.....and then a little
bit of poultry seasoning......
He made me feel fantastic when I made this
and said it was outstanding.......he is also
a wee bit lactose intolerant so instead of the
usual mashed potatoes for him......I put in a
large baker in the oven along side of the turkey
also make him some bread stuffing and put that
in aluminum foil and put inside turkey pan....
 
I've never had to cook Thanksgiving dinner for a vegetarian, but foodtv.com has a whole section with vegetarian Thanksgiving dishes. They look yummy.
 
Hi! My boyfriend and I are vegetarians and I looooove to cook! I can give you a few recipes that are pretty simple to make and taste great if you'd like.. One that comes to mind right now is stuffed acorn squash, I hardly use exact measurements but i'll try the best i can:


2 acorn squash (dark green w/ some orange spots, round shape like an acorn w/ ribbing)
1 carrot chopped
1 stick celery chopped
1/4 cup chopped onion
1 small can garbanzo beans (chick peas)
1 box uncle benz wild rice original recipe (not the quick cook box, that has chicken broth)
1 to 2 tbsp butter
2 tbsp olive oil

1. start cooking the uncle benz rice as directed on the box
when there's about 10 min. left for the rice to cook:
2. heat olive oil over medium low heat in skillet
3. cook carrots, celery, and onion in olive oil until soft(approx. 5 min.), then put in can of chick peas and cook another 5 min.
4. cut each acorn squash in half, scoop out the seeds and stringy parts inside. take the butter (should be soft) and lightly cover all of the inside of the squash.
5. mix the rice w/ the carrot/celery/onion/chickpeas and stuff the squash with the mixture.
6. cover with tin foil, cook in preheated oven (350degrees, but if you're cooking something else at a dif. temp this is ok.) about 45 min.

It is very simple to tell when the squash is done, stick a fork through the green flesh and if the fork goes through nice and smooth the squash is ready to eat.
