Anyone want to plan our character meals?? Disney first timers!!!

That's 100% correct. We visited both last week. CM's is a buffet, it's bigger, and if you don't have a parent's tolerance for child noise, you won't enjoy your dinner. The night we went, they had a seafood and pasta dish in Puttanesca sauce that I particularly enjoyed, along with a Thai style chicken dish. The carving station had baked ham and a very good roast beef. The garlic mashed potatoes were very good as well, as were a number of the salads. Mickey, Minnie, Donald, Goofy, and Pluto were all in attendance. Most came around once and each spent a couple of minutes at our table. At the GG, the atmosphere was a little more relaxed and a lot quieter. Chip, Dale, Mickey, Minnie, and Pluto were there. Each spent a few minutes at the table, and we saw each multiple times, to the point where if there had been any more character interaction, it would have been hard to eat. At the GG, food is served family style. First they brought out a very nice salad which was partially made from the vegetables that are grown there at Epcot. The main course consisted of mahi mahi with a lemon pepper topping, roast beef, roast turkey, dressing, potatoes, and vegetables. The fish and the turkey were especially good, as were all the sides. Dessert was Mickey Mousse for the kids and an apple crunch dish for the adults. Neither restaurant serves what you'd call fine dining, but everything was well prepared and fresh, and the service was very good as well. Both are prix fixe, and both are expensive. Dinner at the GG for two adults, a 10 year old and a 9 year old was $175 including one $9 glass of wine and a $6 bottle of beer. The same meal at CM's was a few dollars more.

If you go to CM's, get an early seating, say 5:30. There's a large waiting area there, and if you're ADR is for much past 6, you'll find out why it was there. Is it worth the money? If you have it to spend, I'd say yes:

Oh yeah, if you go to the Garden Grill, Chip's nose is dark (think "chocolate Chip") and Dale's is pink ("pale Dale"). That seems to be the only way to tell them apart.
 
Hands down, I would to CRT before the park opens. I love eating at the castle and I love being able to get pictures, including photopass pic, before the park opens.

Since you want Minnie and Mickey...is Chef Mickey the only option? I do like Chef Mickey...I think its a great first trip restaurant. I was worried by two year old would be scared of the characters so Chef Mickey was out first stop. She loved it!!!

I would definately go to CRT for her birthday. We have been to Chef Mickey for both breakfast and dinner. We love the breakfast buffet; however, the dinner buffet wasn't great. If you do decide to go to CM for dinner, make sure to ask you server for the kid's dessert. My kids loved it.
