The one homemade dressing I make most often is a basic vinaigrette.
Take a tablespoon or so of dijon mustard, and put it in a jar with a screw-on lid (or, better yet, use the remains of the mustard *in* the jar). Add one clove of minced garlic, a sprinkle or two of italian herbs, a quarter cup of red wine vinegar and a good pinch of salt and some fresh pepper. Close the jar & shake to dissolve the salt. Add a half cup of oil and shake to blend. You can vary the salt, vinegar & herbs to your taste.
Then, here are a couple of good ranch dressing recipes.

1 cup buttermilk
1 cup mayonnaise (preferably homemade)
1 cup full-fat yogurt
1 teaspoon each dried dill, oregano, and garlic
juice 1/2 lemon
1 teaspoon each kosher salt and cracked black pepper.
Mix everything together. Taste. The dressing might taste a bit more muted than you want, but beware of adding too much more seasoning. As Cookiecrumb said, let it burgeon.
Allow the dressing to sit for a day. Taste. Yeah, that's it.
Use in any fashion you wish.
Serves 8 to 10. Or fewer. Or more. Depending. (Really, it makes 3 cups.)

* 1 clove (to 2 Cloves) Garlic
* Salt To Taste
* ¼ cups Italian Flat-leaf Parsley
* 2 Tablespoons Fresh Chives
* 1 cup (real) Mayonnaise
* ½ cups Sour Cream
* Buttermilk (as Needed To Desired Consistency)
* White Vinegar (optional, To Taste)
* Worcestershire Sauce (optional, To Taste)
* Fresh Dill (optional, To Taste)
* Cayenne Pepper (optional, To Taste)
* Paprika (optional, To Taste)
* Fresh Oregano (optional, To Taste)
* Tabasco (optional, To Taste)
Preparation Instructions
Mince the garlic with a knife and then sprinkle about an 1/8 to ¼ teaspoons of salt on it and mash it into a paste with a fork. Chop the parsley, chives and any of the optional herbs very finely and add to the garlic.
In a bowl combine all ingredients, adding other optional ingredients as you wish, tasting frequently and adjusting seasonings as needed. Chill for a couple of hours before serving, thin with milk or buttermilk if desired.
