I love the dealership line about "real leather", I can assure, you leather marketed as leather is real leather, regardless of the brand. That said, all manufacturers (well, there are exceptions as you move up the price ladder to the $100k+ level) also use vinyl/fabric on non-seating surfaces (ie. side bolsters that connect the seat covering the base of the seat, back sides of the seats, etc.) to varying degrees. Before anyone says anything about VW (and a few other companies) using the term Leatherette, note, that is NOT marketed as leather, its marketed as Leatherette, which is very different.
As for leather itself, I've owned only one car without leather, a Jeep Wrangler, and I wouldn't have it any other way. Yes, leather can be warm, but it cools quickly to your body temperature in heat or warms to body temperature in cold. Heated/Cooled seats also help out in this area. I've never had "sticky" leather seats unless I was sweating a lot and sat down on leather, but that's me being sticky and gross rather then the leather having any issues.
