Anyone have a great lemon dessert~ cookie, pie, cake???

Trying to plan Easter dessert and I think I'd like to make something lemon but don't what. Any recipes???
 
I make the Ladies Home Journal recipe for lemon squares a lot. I found it on-line for you:

These are delicious! They're very pretty too. A few tips: make sure the butter is softened to room temperature before you make the crust. I use a food processor (well, I did before mine broke) to cream the butter and sugar, then give it a quick few pulses to mix the flour gently in. Very important--let the pan cool completely, then sprinkle it well with confectioner's sugar before you cut them. Sprinkle them again just before serving.

I make a jello cake. Use lemon or yellow cake, and then lime jello for the pokes.

The icing is the best part--It is made w/ lemon pudding and cool whip. Very nice and airy and lite. YUMMY.
 

I make a lemon mousse pie that is very easy.

Take 2 small boxes of lemon INSTANT pudding (ds got the wrong kind at Christmas and it makes it harder to make)

Mix in 2 cups of milk. It will be very thick. Add a small container of Cool WHip (it can be low fat) and mix completely. Pour into a graham cracker crust and freeze until solid. Take out a few minutes to thaw before cutting.

If you want a more lemon flavor you can add some lemon zest and some lemon extract.
 
My favorite lemon ice-box pie is so easy! Mix together 1 small can of frozen lemonade concentrate, 1 can eagle brand milk, then fold in a carton of cool whip. Fill graham cracker crust and top with more cool whip. Chill till set. I usually put it in the freezer so it will set faster, plus its really good slightly frozen. :goodvibes
 
My Mom made a lemon lb cake that was wonderful. Every time I make it I think of her!:goodvibes

If you buy a lemon cake mix the directions are on the side. It uses 1 pkg lemon pudding and you bake in a tube pan. You can either drizzle a glaze on it or dust with conf. sugar.

I once had a neighbor who brought the most amazing lemon pound cake to every neighborhood function. She would never give out the recipe because she said it belonged to her grandmother and was top secret. Well, after she died all the neighbors were willed a copy! Everytime I make it I think of sweet Maryetta :goodvibes

Duncan Hines Lemon Supreme Pound Cake. Recipe used to be on the cake mix box. I haven't made it for a very long time however, so am not sure if it still is. Easy to make too although you do need a tube cake pan for it.
 
Want to know a great tip for cake mixes? Lemon or otherwise?

Replace the water with buttermilk and add a teaspoon of real vanilla extract. This makes a richer, more flavorful cake.
 
Lemon cake
Not for the faint-hearted.

For cake
1 lemon
200g castor sugar
250 g softened unsalted butter
4 large eggs
250 self raising flour
1 level teaspoon baking powder
pinch of salt

Syrup
150g castor sugar
juice of 1 lemon (this is a juice of the same lemon used in the cake).

Preheat oven to 160 C. Prepare an 18 cm round cake tin with baking paper (or butter/flour; whichever you prefer).

Zest and juice the lemon. Keep juice for syrup.

Pulverise the zest with sugar in a food processor.
Sift flour with salt and baking power together, and add to food processor.
Add butter and eggs to food processor.
Process until smooth.

Tip mixture into prepared tin, then smooth top and bake for 1.5 hours.
To make syrup, mix sugar with lemon juice.
Turn the hot cake out onto a serving dish and spoon syrup over. Leave to cool.

I prefer to serve the cake warm, with some pure cream on the side. For an adult version, add a tablespoon of gin to the syrup.
 
OMG! I recently discovered a recipe for 'lemon bars'. They are to die for!
The crust is like shortbread and soooooo yummy!

Not to highjack the thread....but does anyone have a good recipe for the angel food cake/lemon pudding/crushed pineapple cake? I've seen a few versions and can't figure out how much cool whip is called for. One recipe calls for a large container:confused3 I want specifics:wizard:
