Anyone have a good potato recipe?

For Christmas day...looking for either mashed potato casserole, or some sort of roasted potato dish. We are having steak on the grill (how's that for different?!)

I have a hashbrown casserole, but I make it every year and although yummy, looking for something different.
 
Maybe you have already tried looking there, but Allrecipes.com has wonderful recipes and you can do a search for what you are looking for, and look for one with good reviews. Sounds like you are prepping a yummy dinner!
 
5 lb bag of potatoes
16 oz sour cream
8-16 oz of cream cheese
4-5 green onions, finely chopped

Peal, boil and mash potatoes as normal (a LITTLE milk while mashing is ok but not too much). Blend in sour cream, cream cheese, onions. Warm in oven for 15 minutes or so.

I usually make these the day before then put them in the oven at 350 for about 45 minutes or so. The cream cheese is variable-sometimes I add more sometimes I just have one brick (8 oz). I think the "official" recipe calls for 8 oz. They actually taste better if made the day before but they are fine not doing that too.

I made this mashed potato casserole for a potluck recently, and even though it isn't fancy, it was a huge hit. I had four requests for the recipe.

Olive oil roasted potatoes.

Take the tiny white potatoes and bake or microwave until done then cut in half. Pour some olive oil on a sheet pan and place cut side down. Top potatoes with a touch of oil oil and broil until done (watch this as they can burn quickly).

These turn out just a little crispy and soft on the inside. Yummm.

Tip - Any of these ideas give it a try before the special holiday dinner ;)
 
I like to add shredded cheddar cheese & French's French Fried onions to hot mashed potatoes; place in casserole dish & pop into the oven to lightly brown the top. Yummmmmmmmmmm!
 
With the skin on, slice the potatoes into 1/4" pieces either rounds or lengthwise, does not matter. Brush both sides with with olive oil, sprinkle with sea salt and cook on the BBQ, they take about 35 minutes or so. Sooooo yummy and perfect to go with grilled steak!

What I am making to go with the ham

Peeled potatoes sliced
shredded cheese - cheddar & jack (50/50 split)
half & half & milk (50/50)
Salt & pepper

In a deep dish baking pan place a layer of potatoes, sprinkle with salt & pepper, cover with cheese. Repeat until the dish is full, squish them down with your hands to make sure the layers are well compressed. Add milk & half & half until 3/4 of the taters are submerged.
Cover with foil, bake at 350 for approx 2.5 hours - remove foil, add another thick layer of cheese and bake for an additional 30-45 minutes depending on how crispy you like your cheese topping
 
If you share your cheesey hashbrown recipe with me I'll share my favored and everyone loved roasted potato recipe with you. :) Mine is pretty easy really. I take about 6 large baking potatoes and dice them into small pieces, then I add some sliced white onion, mushroom, shake on some Mrs Dash (I don't actually measure but it's probably 2 teaspoons at least), add a packet of Onion soup mix and 1/3 cup of olive oil. Mix well, bake in oven for about 35-45 min at 425. I have also added things like Butternut Squash, beets, or really any other root veggie, to the mix and it's been amazingly good!! Everyone always asks for this dish, it's very popular among my family/friends. :)

I'll have to pay attention to this thread, because I am looking for one too. But I have done steak for Christmas! In 2007, it was our year to visit my parents in the Orlando area. They had a new grill, in their new pool area at their new house. DH and I love grilling food, and at the time we were apartment dwellers and could have one. Plus, we didn't want my Mom to go to too much trouble, since she is a CM and had to work Christmas morning. 3 of us loved it, but I found out later that my Dad said, "Steaks are not Christmas food." So I guess it will never happen again.
 
Cut up potatoes and mix with oil and Lipton onion soup mix (recipe on box). Bake in oven. OMG they are good.

That was my family tradition growing up (Dad's favorite dinner). I remember my mom standing in the snow by the grill many years!

I don't have a good recipe for mashed potatoes -- we always had twice baked -- but I made pierogies recently that had a mashed potato filling. It had butter and milk (like for regular mashed potatoes), and sauteed onions and cheddar cheese. The pierogies themselves were so-so, but the filling was fantastic. When I was done filling the pierogies, we stood around the bowl and ate the extra filling with spoons!
 
I love potatoes .. will be saving some of the recipes here and trying them out in the new year .. thanks.
