Here's my basic plan. Unless otherwise stated, breakfast is something quick and simple either that I brought or that I buy at the resort food court/quick service restaurant. This is for a 7-night stay, but can be adapted for any length.
Arrival day: Pay out of pocket for lunch, eat CS dinner at either resort or park of choice. [1 CS used]
First Epcot Day: Sunshine Seasons for lunch, Rose & Crown for dinner. [1 CS & 1 TS used]
Second Epcot Day: Cantina de San Angel for lunch, Garden Grill for dinner (or if you prefer characterless dining, go for Le Cellier) [1 CS & 1 TS used]
First MK Day: Crystal Palace for breakfast, Columbia Harbor House for lunch, Liberty Tree Tavern for dinner. [1 CS & 2 TS used]
Second MK Day: Casey's for lunch, out of pocket for Narcoossee's for dinner [1 CS]
Studios Day: CS place by ToT/RnRC for lunch, Prime Time for dinner [1 CS & 1 TS used]
AK day: Flame Tree for lunch, Tusker House for dinner [1 CS & 1 TS used]
To me, this plan gives a nicely balanced mix of restaurants and does a pretty good job of minimizing OOP expenses without avoiding all of the better (more expensive) restaurants.
That's my take on it, anyway. I'm interested to see what others have come up with.
