I had a great recipe with ketchup but can't find it and DH wanted it for dinner. Any help would be a life saver.

This is the one I use:

1 envelope onion soup mix
2 lbs. ground beef
2 eggs
3/4 cup oatmeal
3/4 cup milk
1/3 cup ketchup

Bake in 13 x 9" pan at 350° for 1-1/2 hours till done.

OR if you don't have the onion soup mix handy:

2 lbs. ground beef
2 eggs
3/4 cup oatmeal
3/4 cup milk
1/3 cup ketchup
1/4 cup chopped onion
1 Tablespoon Worchestershire sauce
1/2 teaspoon dry mustard
1/4 teaspoon ground pepper
1/4 teaspoon ground sage
1-1/2 teaspoon salt

Bake in 13 x 9" pan at 350° for 1-1/2 hours till done.
 
This recipe is from Emeril Lagasse and I love it. I love most any kind of meat loaf, but my family hates it, but even they love this one!

Every time the recipe says "can omit", I do....I because I don't like those ingredients. And the suggestions in parenthesis are my variations to Emeril's original recipe......


Emeril's Most Kicked-Up Meatloaf Ever


2 tablespoons butter
1 large onion, chopped
1 rib celery, finely chopped
1/2 red bell pepper, finely chopped (can omit)
2 teaspoons minced garlic, plus 1 teaspoon
1 teaspoon chopped thyme leaves
1 teaspoon chopped rosemary (can omit)
1/3 cup chopped fresh parsley (or dry)
2 eggs
1 1/2 teaspoons Dijon mustard (or regular)
1/2 cup ketchup, plus 1/4 cup
2 tablespoons plus 1 teaspoon Worcestershire sauce
1/2 cup Heavy cream
2/3 cup Breadcrumbs
1 pound ground chuck (or 2 pounds ground chuck)
1/2 pound pork sausage (such as breakfast sausage) (can omit)
1/2 pound ground veal (can omit)
1 1/2 teaspoons salt
2 teaspoons plus 1/4 teaspoon freshly ground black pepper
4 slices bacon, cut in half (or two)
2 tablespoons white or red wine vinegar
1/2 cup canned tomatoes, chopped or crushed





In a large skillet heat the butter over medium-high heat until melted. Add all but 1/4 cup of the onions, the celery and all but 2 tablespoons of the bell pepper and cook, stirring occasionally, until vegetables are softened and beginning to caramelize around the edges, about 6 minutes. Add 2 teaspoons of the garlic, the thyme, rosemary, and parsley and cook for 2 minutes. Remove from the heat and allow to cool.

Preheat the oven to 350 degrees F.

When the vegetable mixture is cooled, transfer to a mixing bowl and add the eggs, mustard, 1/4 cup of the ketchup, 1 teaspoon of the Worcestershire sauce, and heavy cream and mix until thoroughly combined. Add the breadcrumbs, ground chuck, pork sausage, ground veal, 1 teaspoon of the salt and 1/4 teaspoon of the pepper and mix until just combined. Do not over mix. Transfer meat mixture to a 9 by 5 by 3-inch loaf pan and using your hands, form mixture into a loaf shape. Arrange the slices of bacon on the top of the meatloaf and set aside.

In a small saucepan combine the remaining 1/4 cup of chopped onion, remaining 2 tablespoons of green pepper, remaining teaspoon of garlic, remaining 1/2 cup of ketchup, remaining 2 tablespoons of Worcestershire sauce, remaining 1/2 teaspoon of salt, remaining 2 teaspoons of pepper, vinegar, and canned tomatoes and bring to a boil over medium-high heat. Cook until thickened, about 5 minutes.

Pour the sauce over the uncooked meatloaf and bake for 45 minutes to 1 hour, or until the bacon and sauce are slightly caramelized on the top of the meatloaf. Remove from the oven and cover loosely with aluminum foil. Let stand for 10 minutes before serving.
 
I have never been a meatloaf fan but this one is tasty. But, meatloaf is one of those dishes that everyone makes a little differently so what tastes good to one may not someone else.

1-1/2 lbs. lean ground beef
1 cup milk
1 egg, lightly beaten
3/4 cup soft bread crumbs
1/2 to 1 whole medium onion-chopped
1 tablespoon chopped green pepper
1 tablespoon ketchup
1-1/2 teaspoons salt
1 teaspoon prepared horseradish
1 teaspoon sugar
1 teaspoon ground allspice
1 teaspoon dill weed
Additional ketchup

In a large bowl, combine the first 12 ingredients; mix well.

Press into an ungreased 8-1/2 in. x 4-1/2 in. x 2-1/2 in. loaf pan. Bake at 350 degrees for 1 hour. Drizzle with ketchup; bake 15 minutes more or until no more pink remains.
 

Heres the one I use


1 box prepared stove top stuffing
Ground meat
garlic salt
salt pepper to taste
1 4oz block of chedder cheese
1/4 cup grated parmesan

mix prepared stuffing with meat, cheese and seasoning. Fill bottom of meat loaf pan with mixture but reserve about 30 percent for the top. place chedder cheese on top and towards the middle so it wont touch the sides of the pan. Then add the reserved mixutre and top it all and press together so it wont seperate during cooking.

Bake at 375 for about 40 minutes.


Optional sauce
Mix 1/2 cup katsup, 3 tbls favorite dark soda, i like Dr pepper. 1 1/2 tsp honey,
wisk together and heat on low until sauce gets a bit thick. Top meatloaf during last 5 minutes of cooking.
 
1 lb Hamburger
1 cup cooked rice
1 egg
1 slice bread crumbled
1 big squirt of katsup
3 slice of cheese crumbled
1/4 cup fine chopped onion-optional
couple of shakes - garlic salt, onion powder and pepper

Mix all together in big bowl.. drop into loaf pan.. bake 350 for about 50-60 minutes till brown and bubbly !!
 
My mom taught me how to make her meatloaf. I don't have a recipe, but it's so easy. Mix 1 lb. ground beef (or a little more) and 1 lb. sausage. Squish in a can of evaporated milk (I use evaporated skim). Mix it in. Shake in some instant rice and mix. Plop into a baking dish. I always make a well around the edges for the grease. Towards the end of baking time add ketchup or tomato sauce if desired. Trust me, it's delish! People who don't like meatloaf ask for more. ;)
