Anybody else struggling...

Yes. We only have one single park day while in Florida in April. HS has become too iffy- we called and had our tickets converted from non-MK to MK tickets. We can never go wrong with MK.
 
To plan Hollywood Studios without knowing when Toy Story Land will open?

We'll be there May 29-June 5, so we'll be arriving the Tuesday after Memorial Day. Toy Story Land could be opened. If it's not open yet, I've read there is a possibility that TSM will be closed in preparation for the opening. If it's not open and TSM is closed, there isn't a lot we'll do so 1 day will be enough, but if it's open then we'll probably want 2 days. Part of me wants it to be open so we can experience it while we're there, while another part of me hopes it's not. We do like TSM and will be disappointed if we don't get to ride it, but on the plus side, it will make FP choices easier.

I wish they'd announce with Toy Story Land will officially open, it would make my planning so much easier.

I am finding this really hard to plan around. We will also be there over Memorial Day. I am making a plan for if it is open and if it is not. ADRs are the tricky part. I assume we will know about the opening before I need to book FP. Earning announcement I believe is Feb 6th this year. Hoping they announce a day then.
 
Even if it's not open by Memorial Day, there's also a good chance you can get some soft openings. I would schedule at least one DHS day, just in case. And keep an eye on these boards.
