It is almost time for me to make my ADR's (we are going in January) Here is what I have in mind but I'd like some input.
We are staying at the Fort Wilderness Campground in a tent.
We have three children who will be 8,5,4...these kids are not used to eating in restaurants but are not picky and will try anything (their favourite food is sushi)

Sat. Arrival
Sun- M.K. TS- Liberty Tree Tavern
Mon - A.K. TS- Boma
Tues- Epcot TS- Coral Reef
Wed - MGM TS- Fantasmic package Mama Melrose (if they have fantasmic on a Wednesday otherwise we'll change it to a weekend)
Thurs- MK TS- 'Ohana
Fri - Epcot TS- Biergarten
Sat- TL TS- Whispering Canyon Cafe
Sun- M.K TS- Chef Mickey's
Mon - M.K/Epcot/M.K This is a busy day and depends on whether or not PPP will be offered on this day...BBB for two daughters, TS Akershus, PPP party
Tues- MGM/Epcot TS Marrakesh
Wed - Hit our fav's/ no idea for dinner maybe just Whispering Canyon again due to proximity. Or maybe something in Epcot

Although the parks close fairly early most nights (due to the "off" season) we plan to get to the parks at opening (or before) and stay until noon. We will return for a nap/swim (I know it may be too cold to swim but we are from way up north and I'm positive the kids will want to swim regardless of the weather!) Then we will return to the parks/dinner around 4ish which only gives us a few hours but we hope to take advantage of the EMH in the AM and PM when they are available. We have done this routine at DL and it worked well.

Any suggestions on restaurants that would be a better fit for us? We hope to do Downtown Disney and Perhaps Cirque and Disney Quest (actually, Disney Quest is on the must list as my 8 year old son is crazy about video games and I'm sure this would be a highlight for him!)

As well, does anyone know exactly how many credits of each we will receive? We are arriving on the 12th of January and leaving on the 24th do we receive credits for the arrival and departure days or not?

Overall, I like your choices. We really enjoyed Akershus and Boma this past April and are looking forward to Marrakesh and Biergarten in August. We almost did an ADR for Whispering Canyon and are trying to get the Mama Melrose Fantasmic but it's booked up. We had Chef Mickey's for breakfast a couple years ago and it was nice (I'm not much of a breakfast person so it's all sort of the same to me but food was fresh).

We haven't eaten at Coral Reef - it seems to get a lot of love it or hate it comments so we haven't been interested in trying it though the fish tanks are awesome so the atmosphere will be great.

Places not on your list:
- We really liked Raglan Road in DD for the food, drink, entertainment
- We're doing the Cape May Cafe Clam Bake in August - that or Spoodles would be a nice choice if you've never done the Baach Club, Boardwalk area and it's a close walk from Epcot.
- We also tried to get Le Cellier for August - seems to be very popular and well-liked by most on the boards
 
If you're staying at FW, might want to think about trying Trail's End. We really enjoy the food there.
 
The DDP is one set of credits per person per NIGHT.
