Any Sam's Club meat shoppers?

I'm a long time Sam's shopper but found out something new this weekend.

I always new that their boneless pork chops were cut from pork tenderloin but didn't want to deal with that at home. Well, they will cut it for you and repackage for free! Tenderloin was $1.68/lb compared to $2.88/lb for the tenderloin they packaged into chops. I saved almost $10 by having them cut a tenderloin!
 
they will do that with a filet roast too. I like the meat I get from there.
 

Do you just take the tenderloin to the window and ask them to cut it into chops?
 
I do not shop there for meat. Crazy long story---I generally get to meet my meat before I eat.

That said, I know a man worked for 50 years in the commercial meat industry. The jobs he had at the end of his career included overseeing the construction of meat processing plants and then the equipment placement and staying on to run the plant for major producers for the first year. This was a REALLY good and HIGHLY compensated job. He could literally afford to buy meat anywhere. He also had connections all over the meat world. He used to buy a ton of meat at Sams. For Pork he also told me that Target had an exclusive contract with a really high end producer at great pricing. I have taken the Target tip before and been happy, but we don't eat a lot of pork. My beef I generally get as a whole butchered cow, but I have a family connection.
 
we buy the tenderloins (though at Costco) and use our kitchenaide meat grinder attachment to make sausage (country style, andouille and Italian). so much less expensive and WAY less fat (we just trim the little bit that the tenderloin has off). we've also taken the mutantly huge ones, cut a couple of decent sized roast size pieces off (for pulled pork) and used the rest for chops or sausage.

I'm a big fan of looking for the best meat prices and asking the butcher to cut it the way I need it-the other night there were roasts on sale for over $1 per pound less than the lower quality stew meat-no brainer, I handed the butcher a roast and asked him to make it into stew meat.
 
I've heard of folks doing this, but I've never gotten up the nerve. If I want a roast cut into stew meat chunks or chops, I do it myself. It was a PITA and a struggle...... UNTIL I got a LOVELY new chef's knife for Christmas! I didn't realize how HORRIBLE and DULL my knives were until now! I've had them resharpened a few times, but being low-end knives, they still weren't great.

Maybe I'll see what Market Basket says next time I'm there. I ALWAYS buy a roast (usually an inexpensive oven roast) and chop it into stew pieces or stir-fry pieces..... that always saves me AT LEAST $1/lb and often more.....................P
 
I also do this at Stop & Shop. I pick a package of the boneless chicken breasts and ask the butcher to filet them for me. I get double the chicken, plus they are all uniform in size
