My 20-year-old daughter and I will be doing an EMH morning at EPCOT on May 16th. Is there any suggested order in which to hit the following EMH attractions: Spaceship Earth, Soarin', Living with the Land & Test Track?
If it was me, I'd go straight to Soarin and ride it. Grab a fast pass when you leave, head to Test Track, ride that. Walk out of TT, ride M:S. By then, the park should be open, head back and ride Living with the Land, then stroll over and catch the first Turtle Talk thing, then burn the FP on Soarin'. (And grab another while you're there. )
Either hit Soarin' first, or get fastpasses for Soarin', do Spaceship Earth and Living With the Land (or Test Track) and then go back with your FPs for Soarin'.

How I usually do it when making a solo visit to Epcot. Should work for you guys too ...
I'd go to The Land first, get Soarin' fastpasses and put 'em away in my billfold. Then I'd get into the stand-by line for Soarin' and ride it for the first time. Next, I'd walk over to the Test Track. Mom & Daughter split up here, and both enter the single-rider line (you will both leave the ride at almost the same time). Then you can both ride Test Track again, using the single-rider line Y'all can have two rides this way in less time than it would take for just one ride, if you stuck together in the much longer stand-by line. Next, walk back to The Land, and ride Living With the Land. (If there's a long line there, you should be able to get more fastpasses by this time.) Then I'd enjoy my second Soarin' ride using my fastpasses.
If I had to wait for either of the fastpasses, I'd go see the movie in The Land, and/or have a favorite beverage at Sunshine Seasons to fill in the time.
I always leave Spaceship Earth for last because there's never a line by the time I do all of the other things I want to do at Epcot. Many folks rush to this attraction first because it's the first thing they come to, but later on in the day there's seldom any line at all.
Definatly do Soarin first, and get a FP while you're at it. Trust me, you'll want to ride it twice. Then ride Living with the Land, use your FP for Soarin if the time is up, and get another FP for Soarin. Head over to Test Track, and like the other poster said, use the single rider line, which really cuts the wait. Spaceship Earth is usually a walk-on for most of the day, so don't worry about rushing to it.
Soarin'(I have never been there since it's opening but I would guess that it is the longest due to it being new)
