Any quick service breakfast in either park?

I'm hoping for something a little more substantial- maybe like an egg and cheese sandwich, for example- rather than just pastries....

Yes. Boulangerie at The Studios and Croissant Moon at IOA both have breakfast croissant sandwiches. They are a dollar cheaper than at WDW and come with a nice side of fruit.

You can hit the Burger King Wopper Bar for egg sandwiches and hash browns. They have the basic Burger King breakfast cheaper than the park food.
