Several have ravioli. I recall seeing it at Chef Mickey's (in shape of Mickey, no less - one of the meal highlights by far.)
I think it's part of the regular menu rotation , but may not be onthe buffet every night. (Most buffets have like a Mon/Wed/Fri menu and a Tues/Thus/Sat menu. I don't know about Sundays.)
According to a menu I just looked at from allearsnet.com Tutto Italia has Tortelli Di Vitello Al "Chianti" - veal and Chianti ravioli, parmesan cheese, sage butter, roasted tomato $25 _ Totelli is pretty much tortellini. It's on the adult menu though.
Disney's website shows current menus, but it is slow to load. Look up the individual restaurant, then look on the right margin for a link.
Il Milino in the Swan has totellini on the adult menu.
It's Disney - they want to serve the most food the dastest. Filled pasta takes longer to cook, and has the risk of breakage - so Disney tends to offer Mac n'cheese or penne with meat sauce.
