Any lesser known things to do during Christmastime at Disney World?

Will be there the first week in December and we want to do and see as much as possible since it's our first time going for the holidays. We have the big stuff planned like MVMCP and the Candlelight Processional. We even have plans to tour the deluxe resorts to see the decorations. Are there any lesser known Christmas hidden gems we should know about?
 
The first thing that popped into my mind was the Ft. Wilderness campgrounds. Campers there go all-out with their decorations, and it's really fun to stroll through at nighttime. Combining it with dinner at Trail's End would be ideal!

And, if you're into this sort of thing, at the GF during certain hours (I saw this during the day last year) you can watch one of the pastry chefs decorating the little gingerbread houses. And of course the house-sized gingerbread house at the GF is awesome adorable.
