Since Epcot closes early on May 5, go to Epcot on May 4 and go to MGM on May 5.

As for the day you arrive, how much time will you have? If it's a full day or almost full day I'd say go to one of the parks then and just shift your itinerary and leave the last day as a day to revisit one of the parks. After visiting all of them you will know better which one you'll want to go to twice.
