We are Canadian cruisers as well (myself, DW, DS, DD1, and DD2) and have been on 4 cruises, and have booked the 5th for next year!
There are lots of tips on the cruise section of these boards so I'd also recommend that you check that out.
Also, be aware that Disney will hold your passports for the duration of the cruise. They will take them form you at boarding and return them to you when you clear customs at that very early hour when you are back at Port Canaveral.
Being a frequent traveller, I am never comfortable letting my passport out of my sight, but we've never had a problem. You probably want to ensure you have your passport numbers written down somewhere, just in case (this is a good thing to do anyway).
Also, be aware that cruising Disney style is *highly* addictive. If you think there is an outside chance you will want to go again, ensure you book your next cruise while you are on board - this will get you the best deal and you cancel later if you decide to not go.
