I think I read that you can pick up your park tickets up to 3 days early? So, if we check in on a Sunday for one night and then the next day we check into another hotel for our package (room, tickets, and free dining) can we really pick up our tickets on that first day (Sunday)? I just assumed we couldn't visit the parks until our package started on Monday

Yes, it can be done at GR at one of the Theme Parks or DTD. It cannot be done at the resort. Here's the information on how to do it. See Post 15I:
