Another meal planning question

I have all our meals at the Fort figured out, except the first night. I know after driving down from SC and setting up the tent, my dh is not going to feel like getting a fire going and cooking hot dogs or something like that. Due to budget constraints and food allergies, we cannot get the great fried chicken mentioned in another post or somehting like that. Almost all our food must be made from scratch from acceptabel ingredients, so it is just easiest to cook ourselves.:stir:

Can anyone think of a easy, filling dinner with little to no cooking that will do well at a campsite? I thought of serving cold beans and corn muffins, but I worried the inevitable crumbs will attract way too much wild life to my campsite. Or am I obsessing to much about that?:confused3

Any suggestions welcome!!!
 
How about sandwiches? Could you do something easy like BLT's, where you could prepare the bacon at home and put it in a ziploc bag? Or just turkey sandwiches.

Nice thing about the first night is, you can have a meal you prepare at home prior to leaving that is still fresh when you arrive. And considering you don't want to warm anything up that night, a cold meal like sandwiches makes sense. Or, a cold pasta salad with cut up chicken in it.
