anniversary night in Epcot - ADR at GG, what else should we do?

I was thinking of booking us on the segway tour before dinner, but it's a lot of $$. We have the PH, so could go anywhere and just be to GG for our 7:00 dinner. No kids that night, so I want it to be extra special. Our trip is in August - what suggestions do you have?
