Animal Kingdom at rope drop?

My husband and I are going for a weekend away the beginning of May without the 3 year old. We'll be in the parks for three days, but of course with the limits on FP we'll have to do one park without fastpasses.

Right now, we were thinking we would do Animal Kingdom at rope drop and then park hop to Magic Kingdom around 4 pm. We don't have to do everything, we're just trying to knock out the rides we never get to with with a kid under 40".

What order would you go in to maximize time and hit the 40" and over rides?

Additionally, what rides do you FP at Epcot? Soarin or Test track?

I feel like such a pro at getting all the other stuff done, but, parkhopping with the new FP and trying just for the headliner rides is new to me.
 
Animal kingdom I would go right to Everest =) and fastpass Soarin go to test track at rope drop if u can !
 
Everest should be the first stop, then the question is whether you go to the Safari (next worse line) or go to Dino-Rama and hit Dinosaur and Primeval Whirl (more quantity and closer)

Personally, I'd go Everest then Primeval Whirl then Dinosaur then cut across the park to the Safari then go to Kali (presumably once it is getting warmer in the day). In between the Safari and Kali, you can hit the animal trails or Wonders of Flight. After Kali, hit up Nemo and Tough to be a Bug (and Triceratops Spin).

By that point, you can go to Rafiki's or do any M&Gs or whatever you want.
 
Get your FP online for Everest, safari and dinosaur. Then go to safari because the animals are more active earlier in the day.
