Yachtsman is great.
Jiko is also great.
Teppan Edo is a lot of fun, the food is fantastic and the prices are reasonable.
We enjoy the Liberty Tree Lunch menu (at the very least it is the best thing in that park), but haven't tried the family style dinner.
Boma is a fantastic buffet, but it is pretty pricey.

I can't believe 'Ohana hasn't been mentioned. It became mine and my DH's absolute favorite restaurant on Disney property as of our last trip, and we can't wait to eat there again in March!

We also like Le Cellier, 50's Prime Time, Planet Hollywood, Chef Mickey's, and Crystal Palace.

'Ohana is our favorite because the food and service is wonderful. The atmosphere is pretty cool as well. We also like Le Cellier and 50's Prime Time for the food as well. At Chef Mickey's and Crystal Palace, the food can be hit or miss depending on what meal you eat there, but the character interaction is wonderful!

We haven't tried alot of the nicer restaurants, but here was my list of the ones we did try.

Teppan Edo - the food was nice and light but filling, liked the Mickey volcano, service was excellent
Crystal Palace (Breakfast) - great food, and puffed french toast. Did I mention puffed french toast?
Boma (Dinner) - One of our best meals. A little variation from your typical disney buffet foods.
Mama Melrose - we had an amazing meal here. We were a party of 9 and not a single person was unhappy with their meal. We tried all the appetizers on the menu and most of the deserts.
Akershus (Breakfast) - We enjoyed breakfast here. There was a little bit of a wait, but the food made up for it.
