According to the Guide Book for Guests With Disabilities-the following is what is offered for guests requesting ASL
If requested the WDW Resort provides Sign Language interpretation for Guests at live Theme Park shows with a minimum of seven days notice.
The following shows are currently being interpreted on a rotating basis as follows
MGM-Sundays, Wednesdays
MK-Mondays, Thursdays
Epcot-Tuesdays, Fridays
AK-Saturdays

They also offer Reflective Captioning and Video Captioning.
You can also request a Guidebook for Guest With Disabilities be sent to you, there is one for each park.
Also if the party is staying on site and needs special room accomodations may include such items as TTY's, stobe light smoke detectors, closed caption tv's, knock and phone alerts
