I did not take the dining plan. We want to mainlly eat on the run. And one of the days we will be be at Universal and another day we are meeting someone for dinner. Will I regret not taking the dining plan?


Also, Can you celebrate a birthday somehow (cake somewhere) if it is not the actual birthday? My husbans birthday is 3 days before we get there.

It all kinda depends on your eating habits. Many folks don't save any money by using the dining plan, and pay out of pocket, and do just fine. The dining plan is actually designed to keep folks on property the whole time, and since you're going to be at Universal one day, and dinner out one night, then the dining plan probably wouldn't be best for you anyway.

Another question, though ... even without the dining plan, you'll still want to make some ADRs for places you have your heart set on. But if you aren't real picky, you won't starve.

Disney is pretty liberal about when you celebrate birthdays.
 
If you plan to eat "mostly on the run" I don't think you will have any regrets. Our first two trips to WDW we did the same and were quite happy with counter service and off site dining. Now that we are "veterans" we prefer to relax with a TS meal and find the Dining Plan good value.
