Everyone who is going be a driver in a rental car has to show a valid license at some point, don't know where that is at the airport though... It's usually where you pick up the keys at other places though.

Depends on the rental company. If you are looking to show your license when you pick up the keys at National or Alamo, you are going to be showing the keys to the car. LOL. The keys are in the car doors (except for a few "hot cars").
 
I've added my DH to the reservation online with his license number and such. Will he need to show is license as well when checking out? I'm not sure how MCO is laid out, but I was planning to get the car, install the car seats and then swing around to pick up him, luggage, and kids.

No, you don't have to show his license. We actually only check the driver of the car. MCO is a very large airport. You can do what you planned,but, you will have to swing around to the "arrival" level to get them.
 
Is this true for Fort Myers as well? If I have a reservation for a compact through Alamo at RSW could I pick from the Alamo or National compact cars?

Your selection will be better at Alamo, but, I believe you can select from National as well.
 

Another tip:
There are usually 3 exit booths running at MCO/OIC on both sides. As you round the corner to exit, look up and if there are green lights showing on the upper right hand corner of the exit booth, go to the shortest line. Almost everyone goes to the middle booth.
The exceptions to this are: during breaks(then there are 2 open), after 12am(usually only 2 open) after 1am (usually only 1 open).
