AKL, Cruise, then what?

In early May, DH, DS (3) and I are doing the land/sea vacation with 3 nights at AKL, followed by a cruise. Instead of flying home on Thursday, we're considering staying one or two more nights in the Orlando area.

What should we do with the extra days/nights?

Return to Disney? If so, where should we stay?
Do something else? If so, what?

In 2001 we stayed for 6 nights at POR then a 4 night cruise aboard the Wonder then we stayed at WL for 2 nights and had a great time. It was nice to come back to the deluxe resort after the cruise.

Of course you may want to try Universal/IOA.
