The princesses change. I don't know if it's seasonally or based on what princess can be there on a certain day with their hectic schedules attending balls and visiting their kingdom's.
I know last year when we went Ariel was there for breakfast, but no Cinderella. Based on what I've seen from others, Cinderella and Ariel were there for breakfast recently.
Food at breakfast is not great for the price, we stuffed ourselves on yummy berries from the buffet because the hot food was less than stellar, especially for the price. Heard another review recently of Akershus that ripped the food too, but to each their own, everyone has different likes and dislikes
DD loved the experience, but I wouldn't do breakfast there unless it's before park opening and I could get the double value of no wait time for princesses and not spending valuable park time (our stays are always short). If time in the parks isn't as valuable to you, I would try the lunch or dinner. Hope that helps.
